RECIPE CORNER: A Beef Pork Christmas

BEEF PORK WITH BEAN SPROUTS

What You Need:
*450g pork fillet, thinly sliced
*450g pound finely sliced beef
*200g mushrooms, sliced
*200g bean sprouts, rinsed
*Salt, to taste
*2 tablespoon soy sauce, to taste
*1 tablespoon vinegar
*1 teaspoon corn flour, dissolved in 250ml water or as needed
*Water
*3 tablespoons oil, divided
*Chilli paste, to taste
*4 cloves garlic, finely chopped
*1 (2cm) piece fresh ginger root, grated

Method
* Marinade the pork and beef combined in soy sauce, vinegar, grated garlic and ginger root for 20-30 minutes.

* Heat the vegetable oil in a wok (or deep frying pan) and stir-fry the green beans for two to three minutes. Place in a bowl on the side.
Stir fry the mushrooms two to three minutes and add to green beans.

* Stir fry the bean sprouts one to two minutes. Add to the rest of vegetables on the side.

* Add additional oil if needed to wok, the beef, pork and chillies, and stir fry for four to five minutes, until well done. Return the vegetables to the meat in the wok and add the corn starch mixture.

* Heat until sauce is thickened and clear.
Turn off heat and serve promptly with rice.
